Ingredients for 4 portions of pumpkin soup:

  • 2 potatoes
  • 1 Hokkaido pumpkin (approx. 800 g)
  • 2 Onions
  • 2 tbsp butter or veg. alternative
  • 1 garlic clove
  • ½ Parsley
  • 100 ml cream or veg. alternative
  • Salt, pepper, nutmeg
  • Ginger to taste
  • 1 liter veg. broth
  1. Deseed and wash the pumpkin, and peeled potatoes in half and cut into large pieces. Dice the onions and finely chop the garlic.

  2. fry the onions in a large pan with heated butter for 2-3 minutes.Then add the chopped garlic,ginger, pumpkin and potato pieces, fry briefly and then deglaze with the vegetable stock. then deglaze with the vegetable broth.

  3. Bring the soup to the boil and simmer over a medium heat with the lid on for 20 minutes. As soon as the pumpkin and potatoes are soft, the soup can be pureed with a hand blender and season to taste with cream.
